Berry Delicious Fruit Crisp

On January 4th, over 800 people enrolled in the FREE 21 Day Eat Challenge at On Target Living.  This challenge consisted of eating with in the two center green circles of the food target for 21 days.  The goal of this challenge was to get people thinking about how to make everything they eat better by simply improving the quality and choosing foods closest to the source.  (Example: Apple versus apple juice) See EAT Challenge Handout for the foods included on this challenge.  MiniTargetHere are some examples of how to trade up to better quality foods:

  • Cooked rolled oats with cinnamon, almond butter & raisins vs. sugary cereal
  • Whole grain brown rice vs. white pasta
  • Grass-fed beef burger on sprouted grain bun vs. a fast food cheeseburger
  • Kale chips vs. processed potato chips
  • Organic raw honey vs. processed white sugar
  • Banana ice cream vs. frozen yogurt
  • Herbal tea vs. coffee

This challenge was also about inspiring people to get in the kitchen and experiment with new foods and flavors.  Our new Target To Table cookbook was very helpful for showing people how to make their meals healthier and more delicious by using one superfood at a time.

We had many people sending in pictures of ways they experimented in the kitchen and made recipes that were delicious and EAT Challenge approved.  Check them out below!

EAT Challenge Foods

One recipe that really impressed us over the challenge was the Berry Delicious Fruit Crisp.  It was so good that we decided to share the recipe below.  It is a fantastic healthy comfort meal that can be served as a dessert, breakfast, or a snack.

Berry Delicious Fruit Crisp

Serves 6

Fruit Filling:

6 cups fresh or thawed frozen mixed fruit (berries, apples)

Zest of one lemon or orange

1-3 teaspoons lemon or orange juice to taste

1 teaspoon vanilla extract

Crumble Topping:

2/3 cup raw sunflower seeds

1 cup rolled oats (Reserve 2/3 cup of rolled oats to stir into crumble mixture)

¾ tsp baking powder

¼ teaspoon sea salt

½ teaspoon cinnamon

2/3 cup pitted dates

¼ cup pecans

½ cup room temperature organic virgin coconut oil

Directions:

Preheat oven to 375ºF.

Toss the fruit filling ingredients and pour into a deep pie dish.

Combine the sunflower seeds, 1/3 cup rolled oats, baking powder, salt, and cinnamon in a food processor, and grind until fine.

Place processed mixture into a large mixing bowl and add in remaining 2/3 cup of rolled oats.

Place dates and pecans in the food processor and blend until finely chopped into small crumbles.

Add date mixture to dry mixture and mix.

Add coconut oil to combined date mixture. Work oil into the dry ingredients using your fingers or a fork to form a crumble.

Spread topping evenly over fruit.

Bake for 30-35 minutes until the fruit juices are bubbly around edges. Check at around 20 minutes to be sure the top is not browning too quickly. If necessary, lightly cover with aluminum foil for the remainder of the baking time.

Let cool for 5 minutes before serving.  Drizzle with a little bit of organic honey if you desire more sweetness.   Serve with almond or coconut milk if desired.

The challenge ended on January 25th and many people reported that they had not only lost weight and had more energy by the end of it, but they also developed some healthy new habits and were able to adopt a healthy lifestyle they can now enjoy and maintain.
