What’s more nutritious than beef and has less fat than chicken?

Buffalo meat, also known as Bison, is one of the most nutritious meats and is commonly referred to ‘the other red meat’. Did you know Bison almost became extinct in the late 1800s? No longer endangered today and Bison is widely available at most grocery stores (both Whole Foods and Cost Co carry Ground Bison). Did you know? A Buffalo can weigh up to a whole ton and is considered the largest land animal in North America.

Many people these days are avoiding beef and getting bored with the same chicken and turkey recipes. But what makes it the super meat? To begin, Bison are naturally grass fed and typically live free and roam fields all day long. Since they are much less widely produced than other meat products, it makes them a much higher quality product. For 3.5 ounces, Bison contains 28 grams of protein and 2.4 grams of fat all for 143 calories. That includes 3.42 mg of Iron (Beef has 3mg) and 3 mcg of Vitamin B12 (beef has 2.5mcg). Athletes and regular exercisers will benefit from the high quality protein and iron content. But don’t be fooled, buffalo sauces and dips have nothing to do with this healthy protein source!

The Iron content is what makes Bison it’s rich red color. Due to it’s lower fat content, it is a bit drier than beef. Be careful not to overcook! Try replacing it in burgers, chili, spaghetti, stuffed peppers or even to make Bison meat balls. According to the Bison Counsel, cooking Bison takes about a third less time and heat than cooking beef. Although ground Bison is more expensive than beef products and costs about $8.50 for about 16 ounces, the higher quality is worth the price. You can try stretching it by adding vegetables and beans to your cooking.
