I Love Butternut Squash Soup
With fall in full swing, new flavors are all around us from pumpkin spice to butternut squash everything. Butternut squash is such a versatile vegetable that can be used as the base of many dishes from not only soup, to pasta sauce and even stuffed to make a perfect entree. One of my favorite dishes this time of year is butternut squash soup. I mean who doesn’t love butternut squash soup? It is healthy, delicious, and oh so comforting. Plus, it can be eaten again and again through the course of the week.

I Love Butternut Squash Soup
To make this recipe even easier. I throw all ingredients in a crockpot and cook on high for 3-4 hours or low for 7-8 hours. Once soup is cooked, I use an immersion blender to make this dish nice and creamy. Then I top with toasted pumpkin seeds and dive in!
